Trying to use NM to get from one machine with 3 screens to another have tried setting it to fit across all screens but it still will not give me but one screen. I am on the latest version of NM as well.

If I understood correctly what you’re trying to achieve, I am afraid it is not supported.

I am using the same number of monitors and am not dealing with any VMs in this use case, so I’m not sure if those applied.
I am not sure that I fully understood the problem. What I can advice that you check following NoMachine article Switching the view between multi-monitors during a remote desktop session.
If this does not help, can you maybe describe in details what is the OS on server and possibly screenshot of display arrangement of server and client.
