I currently have five NoMachine clients deployed on Windows VM’s that connect to individual physical Mac machines. I am trying to find a way to only allow one user to connect to their designated physical Mac and no other device, as well as restrict them from adding more machines to their client.
I understand from the details in this article https://knowledgebase.nomachine.com/FR04O03402?s=trusted%20user that I can select a specific device that a user is allowed to access, but is there a way to allow them to only access that device and no other?

The product that would fit your needs is multi node environment with the NoMachine Cloud Server + Enterpirse Desktops or other NoMachine products.
It will allow to select the machines visible to the users and allow to assign a server to every user. Please check https://knowledgebase.nomachine.com/DT11R00172#3.6.
